Our story
A love letter from our family to yours
We roll the pasta, press the dough to order and cook the sauces down slow. Nothing on the line came out of a bag. The ovens run all day, so what reaches the table was made for that table.
Two dining rooms in Georgia, Duluth and Hoschton, run from the same recipe book. Pizza, pasta, shawarma and wings share the menu, so the table never has to agree.
Neither room is a copy of the other. Duluth sits inside a family entertainment center, loud and quick. Hoschton is booths, a mural and a red Vespa. The food is the same in both.

How the food gets made
Four things we do the long way, because the short way tastes like the short way.

Dough pressed to order
No trays of pre-stretched bases waiting under a lamp. The dough gets pressed when the ticket comes in, which is why the edge puffs the way it does.

Pasta rolled in house
The pasta is made here, not opened here. It goes into the water at the last minute so it reaches the table where it should, al dente.

Sauces cooked down slow
The tomato sits on low until it stops tasting like a can. Nothing on the line came out of a bag, and that is the whole trick.

One menu for the table
Pizza, pasta, shawarma and wings on the same page. Nobody has to talk anybody into the restaurant before they get in the car.
